Keto Egg Nog

Ditch the store bought Eggnog & make your own healthy, clean, Keto version this season!

Ingredients (Serves 4):

  • 6 large egg yolks

  • 1/4 cup stevia

  • 1 cup heavy cream

  • 2 cups unsweetened almond milk

  • 1/2 tsp. nutmeg

  • 1/4 tsp. vanilla

  • pinch salt

  • pinch cinnamon

Directions:

  1. Whisk the egg yolks and stevia together in a medium bowl until creamy.

  2. In a saucepan over medium-high heat, combine the cream, almond milk nutmeg & salt. Stir often until mixture begins to simmer. Add a big spoonful of the hot milk to the egg mixture whisking vigorously. Repeat, adding a big spoonful at a time to temper the eggs. Once all of the hot milk has been added to the eggs, pour the mixture back into the pan on the stove. Whisky constantly until the mixture is thickened.

  3. Remove from heat and stir in vanilla and seasonings.

  4. Pour egg nog in container and cool.

  5. Refrigerate until cooled. It thickens as it cools.

  6. Enjoy!
